OG的解釋我已經看過了,但我對(B)仍有疑問, 因為than後應該是省略了S.V,但是還原以來變成:rice has protein of higher quality than rice has that (of high quality) in wheat.句意就怪怪的啦!還是我還原錯了呢?

另外,(E)protein前有一個a,不會有冠詞上的問題嗎?

比較的用法很複雜，有很多種情況。這裡(B)並沒有省略的問題。

舉個例子:
I have more quarters than you do. 這時 you 跟 I 比，do助動詞不可省略，若省略會變成 I have more quarters than you，變成you 跟 quarters比，邏輯有問題。
另外一個例子：
I have more quarters than pennies. 這時 quarters 和 pennies 比，很清楚，沒有省略的問題。

同樣的，這題(B)中，後半句說的是米中的蛋白質品質比小麥中的蛋白質品質還要高，所以是兩個中的蛋白質相比，that 指代 protein，不需要補助動詞跟主詞，也沒有省略助動詞或主詞。

這邊的"in wheat"純粹當介詞片語修飾that用
你的翻譯沒有問題「米的蛋白質品質比麥的蛋白質品質高」
只是這句話寫成英文有兩種寫法都可以傳達此意
Rice has protein of higher qulity than wheat does.
（這也是E選錯誤的原因，少了"does"，錯誤省略)
Rice has protein of higher qulity than that in wheat.
