As這裡應該是以...的身分出現。 一般來說as + N都是這樣的解法。
句意上來說，肉已稀少的身分出現。也就是很少有肉啦!

as如果解釋成當...我想不到有直接加名詞的。

.....as an adolescent 也是翻成以成人的身分比較順。如果堅持用當...表強調時間，應該用 as in adolescence. 加介係詞。

Gmat裡as常用的用法如下:

(1) as當"比較": As S1 + V1, S2 + V2.........(S1, S2比較要同類)

(2) as表"身份": as + N
ex: As a student, I shall study hard.

(3) as當連接詞表"當": S1 + V1 as S2 + V2
ex: I saw Peter as I was getting of the bus. (from longman)
ex: As time passed, things seemed to get worse. (from longman)

as在不管什麼情況下後面都不會只放adj而已~^^
