我也選C, 因原文只提到"extensive tests have shown that ....", B選項卻說...can be determined only by.... 此處only的字眼太過武斷, 原文無法充分支持此結論, C選項可以從 "less free oleic acid an unrefined olive oil contains per liter, the higher its quality"得出來比例的概念,所以原文支持C較多

題目第一句,便說明未經淬煉的橄欖油,是無法依其酸度,實際定義其品質。

然而,經過密集的實驗發現:未經淬湅的橄欖油,若含的油酸愈少,品質愈高。
yet extensive tests have shown that the less free oleic acid an unrefined olive oil contains per liter, the higher its quality.

油酸在橄欖油中的比例是一個量測酸度的準確方式。
The proportion of free oleic acid that an olive oil contains is an accurate measure of the oil’s acidity.

If the statements above are all true, which of the following conclusions is best supported by them?

A. When an olive oil is refined, the concentration of oleic acid in the oil is reduced. <--文中第二句便說明,愈少的油酸,橄欖油品質愈高,所以淬湅過的橄欖油,油酸會降低。

B. The quality of an unrefined olive oil can be determined only by accurately measuring its acidity. <--與文中第一句衝突。

C. If an unrefined olive oil is intermediate in acidity between two other unrefined olive oils, it will also be intermediate between them in quality. <--首先從文中了解,我們無法單從酸度判斷橄欖油的品質,所以此選項從字面上初步研判,不正確;但弔軌的是最後一句話,因為我們可從酸度得知油酸在橄欖由中的比例,盡而導出橄欖油的品質。
那為什們最後不選呢?因為文中完全沒有提及油酸在橄欖由中的比例與橄欖油酸度之間的關係,故若要從此選項導出橄欖油的品質,文中少提了一個條件,我們亦不可先入為主的下判斷。

D. Free oleic acid is the only acid that unrefined olive oil contains. <--根據文中資料,無法判斷。

E. People who judge the quality of unrefined olive oils actually judge those oils by their acidity, which the judges can taste.<--與文中第一句衝突。
